Breakfast Recipe: Chickpea Avocado Toast

1   Avocado

1   Can   Chickpeas (2 cups, rinsed)

One Half Tomato, chopped

One Quarter Valencia Onion, chopped

2 Tablespoons Olive Oil

Salt and Pepper to taste

Juice of half a Lime

2 Slices, bread of your choice, delicious yet healthy

Red Pepper Flakes


Prep Time: 8 minutes, unless you use muddling or mashing to release a lot of aggression, in which case, take 12-15 minutes. No worries.



Place the chickpeas, avocado, onion and tomato in a bowl. Add the salt and pepper to taste. Mash it. Mash it real good. I use a muddle just for an extra little somethin’ somethin’. About halfway through, add the juice of the lime. Then continue mashing.


Meanwhile, toast the healthy, delicious bread. Place a tablespoon or two of the chickpea/avocado mixture on the toast and add some red pepper flakes, again to taste. If you are so inclined, add a couple of slices of tomato.
